Unfortunately I do not have a brewery recommendation in Rome, but there were two excellent beer bars with all Italian craft brews that you would never find in the US. Open Baldine (check out the pics online) and Ma Che Siete Venuta, were great. Between these two places and a bottle shop in Venice, I tried so many incredible Italian beers, and learned so much about the Italian beer scene.
Paris - the best brewery I went to recently was Les Cuves des Fauve (and walk down for a glass of wine at Le Baron Rouge nearby, it's a wine bar that feels like a pub). Paname is a nice brewery bar on a sunny day, on the water, just up from l'Atalante which is not a brewery but does brewery collabs. Enjoy!

Yes, we had a nice evening at Paname when we were in Paris for the Olympics, old school brewpub vibes.
